Chuño

  • Chuño is the product of a process involving the washing, freezing and trampling of root vegetables. In Bolivia's La Paz region, potatoes are washed for up to one month before being taken to the Altiplano, where they are laid out to freeze. 

     

    Photographer Klaus Thymann was in Bolivia documenting glaciers, mainly in the cold mountain region, when he came across their culinary traditions. "There is a rich culture which they keep to", Klaus says. "Some places you travel [to] seem as if the local culture is artificially kept alive [but] that is not the case in Bolivia."
