New Potatoes Minus the Skins, a Playlist

  • In 1880, Mark Twain published A Tramp Abroad, a collection of essays and short stories recounting his travels across Europe.  Towards the end of his voyage, Twain, suffering from tiresome hotel meals he portrays as “a monotonous variety of unstriking dishes”, fantasises about the simple American fare he longs for, a feast that shall be waiting for him upon his arrival to his homeland.

  • The bill of fare Twain calls a “modest, private affair, all to myself” consists of 85 dishes deeply rooted in the American landscape, including bacon from Virginia, Missouri partridges, prairie chickens from Illinois, Connecticut shad, brook trout from the Sierra Nevada’s and San Francisco mussels. Twain wants his oysters roasted in shell, Northern style, and his chicken fried, Southern style. Sliced tomatoes, with sugar or vinegar and green corn, on the ear hors along with hominy, sweet potatoes, butter beans and catsup. Iced sweet milk, coffee with cream, and water prepared “in the sincere and capable refrigerator” to drink and pies and fruits of all kinds to finish.

  • Twain suggests Americans travelling in Europe carry this bill along with them to cure dulled appetites. For such daydreamers, we based this playlist on belonging to and longing for America, a walk through its fields, woods, mountains and streams with a full stomach.
